I am a NRPDTP PhD student based both at Quadram Institute and the University of East Anglia.
I’m working with project partner, PepsiCo, using innovative processing technologies, to produce novel food formulations with novel combinations and ingredients which can be targeted to deliver highly accessible fermentable substrates to the gut microbiota. I will be studying the detailed structure and chemical insights within snack foods, and investigating the formation of these structures using advanced NMR spectroscopy approaches, to explore their potential to impact advanced models of the human gut microbiota, with metagenomic and metabolomic approaches.
