I am a postdoctoral researcher working on the Zero Hidden Hunger EU project which aims to tackle micronutrient malnutrition and hidden hunger to improve health in the EU.
My research will focus on iron and zinc bioavailability, and will model sustainable dietary patterns for optimal intake, with particular interest in vulnerable subgroups of the population
I completed my PhD in University College Dublin where I identified dietary and meal patterns of ethnic groups within UK and US populations as well as examining barriers and facilitators of food choice. During my PhD I also worked on the development of tools and frameworks to improve accuracy and quality of novel data collection and data reuse in nutrition research.
