Optimising nutrient release from plant-based foods

I am a biochemist. I have studied the cell walls of many edible plant tissues for processing and nutritional purposes. I am presently studying peas and chickpeas in collaborations with New Food Innovation at Nottingham University, King’s College London and Imperial College London.

I have previous experience in mechanical phenotyping of Arabidopsis cell wall mutants, the fermentation to alcohol of agricultural and food industry wastes, and genome assembly and annotation.
