Bacterial Economics: Adaptation to stress conditions via stage-wise changes in the response mechanism

Common features of microbial adaptation are analyzed with mathematical models and extended to stress conditions when the bacterial population declines before growing again. We point out that the bacterial response to stress is analogous to human strategies. A special case, the behavior of E. coli under osmotic stress, is detailed. Consequences for the focus and further development of predictive food microbiology are summarized.
