Systems biology and bioinformatics to study natural antioxidants – a hardly exploited domain of food science

A brief review is given about the role natural antioxidants, with particular reference to the diversity of phenolic compounds of plants, in the defence mechanisms against the reactive oxygen species developing in living organisms. The paper calls attention to the utilities of interdisciplinary modern computational biological studies not only for the medical fields but to assist further developments at the broad area of plant breeding, storage physiology, and research on food quality and nutrition
