Professor Pete Wilde explains the aims of his research ‘Food Structure in the Gastrointestinal Tract’.

The theme is part of the ‘Food and Health research programme’ at IFR and focuses on how complex food structures behave in the gastrointestinal tract, how they affect digestion and the rates of nutrient release and uptake.
